Can I defrost in microwave without damaging quality?

Sorry, don't know, but is your frozen coconut milk a part of a dish? or frozen in ice cube trays?

No I froze it in order for it not to spoil until I made another chicken panang.

I think (I don't know) that it would separate. I'd just let it defrost on its own. Can't take much time.

Thanks I will do that. I love Panang too, oh so much and was happy to find out I could make it myself without spending $12 every time I wanted to eat it.
