I have a recipe that involves boiling the potatoes in buttermilk, butter, water, a little baking soda, with a little water. It sounds delicious. But the I only have like half the recipe. Anybody familiar with this recipe. I would love to try it.

Diane, I'm not familiar with the recipe. Are you asking if you can cut the recipe in half? If so, that should be fine. You can also make delicious buttermilk mashed potatoes the more traditional way...boil in well-salted water, then add regular milk that's been heated with butter. If you like, you can add a smashed garlic clove to the milk and butter while they're heating to infuse some flavor. Toss the garlic before adding the milk/butter to the potatoes. Then add enough buttermilk to the potatoes for the desired creaminess. Season with salt and pepper.

If it helps, this is more specific for amounts. The garlic I mentioned is optional.

3 pounds Yukon Gold potatoes, peeled
1/2 cup milk
1 stick butter
3/4 to 1 cup buttermilk
Salt and ground black pepper

In a large pot, bring 4 quarts of water and 2 tablespoons of salt to a boil. Meanwhile, cut the potatoes into 1 1/2-inch cubes and add them to the boiling water. Bring the water to a boil again, lower the heat and simmer uncovered for 10 to 15 minutes, until the potatoes fall apart easily when pierced with a fork.

Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.

Drain the potatoes and mash them. Stir in the hot milk/butter mixture. Add enough buttermilk to make the potatoes creamy. Add salt and the pepper, to taste, and serve hot.
