I would like to can a few jars of bread and butter pickles. Is it okay if I substitute Persian cucumbers for the regular type of cucumbers? I'm finding it difficult to find pickling cucumbers. Any suggestions will be greatly appreciated.

P.S. There are recipes on the internet showing how to make B & B pickles using Persian cucumbers, but they all seem to be for refrigerator pickles.

If I remember correctly you have a pickling book that I recommended. There is the best B&B recipe in it that won ribbons at LA fair. I made them once with English cucumbers but the flavor is not there. Pickling ones are not usually used. I love he Persian but they may not have a strong enough flavor either. Taste any cucumber as they sometimes do not have a good flavor. I threw out about a crate because they did not have flavor.

Instead of having my cookbooks scattered all over the place, a while back I purchased a small bookcase to keep them all in. I bet I have several more books I forgot about.
