I have some leftover carnitas, and I would like some ideas of how to use it, other than filling for Tacos or Burritos.

How about
....in or over an omelet
....over pasta or rice with the addition of vegs
....in Spanish lasagna using corn tortillas
....add to a soup base like tomato, pureed broccoli, pureed hard squash, thin if necessary with broth

Liberal dousing of cilantro or parsley and chopped green onion at service.

I always prepare enough so that I have lots of "leftovers" because this cooked meat is so versatile.

I add chopped and steamed root vegetables, along with raisins to sweeten it just a bit and use it for a filling in empanadas or pasties.

With other chopped vegetables spoon onto wonton wrappers and make a little "beggar's purse" and steam, serve with spicy dipping sauces.

Use for a filling in "steamed buns" - more spicy dipping sauces.

Layer in a casserole dish with scalloped potatoes or macaroni and cheese.
