Am looking for a recipe that approximates the Pollo Loco flavor system. Not for commercial use.

Melinda once said she had a formula for Pollo Sano, a humorous take on the now-famous
crazy chicken.

Any help is appreciated.

Housechef, that does sound like a good option.

Something else I thought of is the El Pollo "marinade mix" you get at the market. They sell it at Stater Bros...or used to. It's a powdered mixture that you mix with pineapple juice and/or water.
