As I speak, I am enjoying a Guiness draught, and the delightful smell of a 4lb point cut is permeating the house. In a couple of hours, I'll pull the meat, strain the solids (onion, celery, bayleaves and spicepack). In go the red potatoes, carrots, and quartered onions. In the last 15 minutes, the cabbage wedges go on top. I'll make a sauce to slather on, of sour creme, dijon mustard, and horseradish. Piggy heaven for the old boy! Couldn't wait till Tuesday. Hell, what if I got hit by a bus before then?

Ahhhh...I'm envious of any of you eating corned beef now. I'm waiting till Tuesday but will savor every single bite! I actually bought one more small one at Sam's today to ensure more leftovers.

this household loves corned beef and cabbage.
back when this holiday fell, our market had them on sale for 99¢ lb.
brought 4 home, two still in freezer.
for this meal, I always boil red new potatoes in seasoned chicken stock until tender.
then take them out butter salt and pepper and set aside.
cut up the cabbage next and boil it in same liquid potatoes just cooked in.
by now it's really reduced and is very flavorful.
cabbage out, add Wondra and make gravy for over all.
with the cabbage, it gets butter, vinegar, salt pepper garlic powder, then just before serving a light sprinkling of parm cheese then gets tossed
.

Never going to have corned beef again without thinking of Bushmills, and a couple of Guiness Stouts.

I would not encourage anyone to begin to drink. On the other hand, if the only thing holding you back was the belief that here in the states we have the same high liquor taxes that exist in Scandanavia, I would say, you might want to rethink. It's not such a bad idea, if you do so in moderation. Chris

I was kidding about the booze question. :P
Wonder if anyone has ever attempted corn beef hash from their leftover corned beef.
I have, years ago, although not a particular fan of the stuff, it was out of this world.
I'm posting in black now. It's been brought to my attention that posting in the colors I choose are hard to read. < Not my intent. Hope this is easier.
