This is another recipe I just tried from Cuisine at Home's "Cuisine for Two." However, I needed more so I doubled the recipe. It was very good and a nice way to use up any leftover rotisserie chicken from Sam's or Costco.
Chicken Divan Casserole With Mushrooms and Crumb Topping
"Making the lightly curried sauce from scratch transports this casserole a long way from the once-popular versions made with canned soup."
For the Sauce:
1/4 cup minced shallots
1/4 tsp. curry powder
1 T. butter
2 T. flour
1 1/2 cups milk
3/4 cup chicken broth
1 egg yolk, lightly beaten
Juice of 1/2 lemon
Salt and cayenne pepper to taste
For the Filling:
1 1/2 cups button mushrooms, halved
Salt and pepper, to taste
1 T. butter
1 slice rye bread, toasted and torn (See Note below)
1 cup cubed rotisserie chicken
1 cup frozen broccoli florets
1/2 cup grated Cheddar cheese
For the Topping:
2 slices rye bread, buttered (See Note below)
Preheat oven to 375. Butter two 3-cup casserole dishes (See Note below).
Saute shallots and curry powder in 1 T. butter in a saucepan over medium heat. Add flour; cook 1 minute. Whisk in milk and broth; simmer over medium-high heat until thickened, about 5 minutes, stirring often.
Whisk some of hot sauce into egg yolk. Stir yolk mixture back into sauce. Reduce heat to low, and cook sauce for 1 minutes, stirring constantly. Off heat, stir in lemon juice, salt and cayenne.
Saute mushrooms and seasonings in 1 T. butter in nonstick skillet over medium heat until browned.
Divide toasted bread, chicken, broccoli, and mushrooms between two (3-cup) casserole dishes. Pour half the sauce over each; top with cheese.
Process 2 slices rye bread in food processor to make coarse crumbs, then divide between casseroles. Place dishes on baking sheet and bake until divan is brown and bubbly, about 40 minutes.
Note: I used ciabatta instead of rye bread; you could also use French or any other bread you like. The recipe calls for two 3-cup casserole dishes, but I used one large dish, especially since I doubled the recipe. If you make this for just two, one 6-cup dish would work, too.
