 Post subject: "Chinese" cucumber salad

It was my turn to bring lunch for my Mahjong group recently. I cheated
by buying sandwiches at Paradise Bakery but I made my old standby
cucumber salad, which was a big hit. I was surprised that it was new
to everyone so thought I'd post it here as it is so easy, good and go-to for a side.

"Chinese" Cucumber Salad

2-3 cucumbers, peeled and sliced very thin

1/4 cup rice wine vinegar (I prefer Marukan Seasoned, yellow label)
1/2 tsp kosher salt
1/2 tsp white sugar
white pepper to taste
few drops of sesame oil
fresh dill, chopped
finely sliced green onion (opt)

Whisk dressing in bowl to dissolve salt and sugar. Add cucumbers,
toss, let stand at least 30 minutes.
*The cucumbers let go of a lot of water, you may want to drain before serving, if flavored enough.

That sounds good and I am going to try it. it is somewhat similar to one I make which I got from Tyler Florence. That one uses the rice vinegar, and also mint leaves and a hot pepper ( usually use serrano) sliced thinly. But this sounds nice for those who don't like the heat.

Micheline, I love cucumbers, but not all cucumber recipes. I can tell

Micheline, did you ever try salting the cucumbers and then letting the water drain out before you made the salad? It makes them really crunchy. Just sprinkle salt over the slices, let the water accumulate for maybe 15 - 30 minutes, drain and rinse. Then make your salad.

I'm making your salad tonight. Can't wait.
