 Post subject: Gods Own Insanely Hot Wings

Hi all!

New here and I thought I'd share my favorite recipe that I came up with. Took me about a year to perfect this, so I hope you enjoy it.

**Warning! This is VERY hot! To cool the heat index of these wings, reduce the hot sauce and increase the better. This will keep the spicy flavor while cutting the heat**

(Yes, I know these aren't the full wings I specified. It's just a random picture with a modified recipe)


Ingredients:
2 Lbs FULL chicken wings
1/2 cup Rooster Sauce ( http://www.amazon.com/Sriracha/dp/B00348H580 ) Typically found in the asian foods (not hot sauce) section of your market. More or Less to adjust heat.
1 TBL garlic powder
1 TBL ground cilantro (not fresh!!)
1 TBL red peppers
1 TSPN black pepper
1 TSPN Kosher Salt
1 TSPN Lawreys Seasoning Salt
1/2 stick BUTTER (Margarine doesn't work) More or less to adjust heat
1/2 LARGE red onion, diced

Mix all seasonings (except for butter) in a medium bowl thoroughly. Once mixed, melt butter over low heat, then blend into the hot sauce mix quickly so butter doesn't begin to solidify.

After mixing, thoroughly coat each wing in the mix by dipping and rubbing in the bowl. (you may want to set aside some of your sauce mix to avoid future contamination from raw poultry)

**You can marinate for 12-24 hours in the fridge if you so choose.. but I've never needed to with this recipe**

After each piece is coated, lay on Broiler sheet. With a basting brush (or a spoon, so you can get the onion chunks too), slather more of the mixture on the top side of the wing.

Preheat Broiler and place wings (fat side up) into the boiler for 12-15 minutes, depending on YOUR broiler AND the thickness of your wings.

After 12-15 minutes, flip your wings and baste the top with the remainder of your mixture. Cook for an additional 10-15 minutes, based on the thickness of your wings.

Serve with ranch :) (and Beer!)

I hope you enjoy these. For me, most wings are so filled with a vinegar flavor that it really became sickening after a while. These have NO vinegar flavor to them, it's straight heat and taste.
Any suggestions to further refine these wings will be tested in my Kitchen to the fullest extent of the law!
