yeah champagne. Maynard still with us in spirit that is, wish he was still around. Now back the corn beef I picked up a flat cut at Von's for $.99 a pound and I think I'm in a try putting into the smoker this weekend. I have no idea how this is going to turn out but I'm going to give it a try. If anybody's ever done this please let me know what you think. I'm not planning on putting the seasoning packet on it. I'm just going to take it out of the package dry it off and stick it in the smoker with maybe some apple wood chips. Cook it at 225° for as long as it takes, I'm going to have a thermometer probe inserted into the meat to tell on it's done.

Guts, I can't offer any help with the smoker, but you got a great price on a flat cut. I paid $2.98/lb. at Sam's Club for the flats.

thanks for the reply champagne. I paid $.99 a pound for it. Von's and smart and final both have corned beef for $.99 a pound this week. I believe Albertsons is half price, whatever that is. Over on NCT forum. Guts, I don't think I've ever seen flat cuts of corned beef for that price...such a good deal. Maybe I should go to Vons tomorrow, I'd love to have more for the freezer.

I got the same deal at Pavilions which is owned by Vons which is owned by Safeway. Mine was 4 1/2 lbs.

champagne that add was a two-day sale, which is over now but they have another two-day sale and they are point cuts for $.99 now Albertsons has point and flat cuts and 50% off to my surprise smart and final does not have a sale on corned beef last year they had a huge sale on went on for weeks. I think they ordered too much last year.

Guts I received a new smoker for christmas and have been waiting until the sun came out for more than half a day before I used it. I would love to know how your corned beef turned out. I love that and pastrami! Also if you have some tips on kinds of wood you use, where you get it, or any other tips, I would love it. You can post here maybe under different topic, if you have any suggestions for me. thanks :)

Carrie I used Apple would chips for smoking.
I purchased two pieces (one flat cut one point cut 5.41 LB and 3.59 LB) of corned beef when they were on sale for St. Patrick's Day. In used this recipe at this link to season them after soaking them for three hours and changing the water every 30 minutes. I used cold water and added ice to the water to keep the corned beef cold. To my surprise there was not much shrinkage when I smoked them for approximately 3 1/2 hours at 225° until internal temperature was 155°... I was quite surprised at the flavor did taste quite like pastrami. That you would purchase in the store. I suppose it's not technically pastrami but I would do this again and watch my internal temperature does not go over 155° mine went a little over and could have been taken out a little earlier. If you've never done this with a smoker and you have access to one I would recommend giving it a try.

not raining here in San Diego yet but it looks like it could. I got the idea from my pizza site which has a off topic foods discussion. Some of the guys were putting pastrami on their pizzas.
