Ever try a Turkey this way?
I got this recipe from a very old Italian cookbook, although I see nothing Italian about it except perhaps the Olive oil.
ITALIAN TURKEY
Turkey
Olive Oil
Bouquet Garni (blend of Thyme, Oregano, Sage, Marjoram, Rosemary, Salt, Pepper)
1 Lb. Bacon (smoked or not)
The recipe calls for brushing the Turkey with the Olive oil, seasoning, and then browning it in a 400 degree oven for 30 minutes.
Remove the Turkey from the oven and secure Bacon strips to the entire outside of the Turkey with toothpicks.
Return the Turkey to the oven and bake at 325degrees until the turkey is cooked (depending on weight of course).
I did mine this way several years ago and it came out very good and tender. The Turkey is basted naturally with the bacon drippings, the bacon is crisp and everyone fights for the skin
