 Post subject: Need Asiago bread recipe! Someone, anyone!

Okay, gang...I am frustrated. I do not own a bread machine or a mixer with a dough hook, and I'm not interested in buying either to make Asiago bread. I'm also not interested in a recipe that calls for the Asiago to be cut in chunks, because I already shredded what I bought.

Does ANYONE have an Asiago bread recipe that is NOT geared for a bread machine?? I can't find one on Foodnetwork OR Epicurious, and the other ones I've seen are all for bread machines. Thanks!!

I don't make bread all that often but I really don't see why you can't take a bread machine recipe and do it by hand. I've done that a few times with good results.

I googled this recipe. Will it work for you?

1 T. dry active yeast

5 - 6 C. white unbleached flour

1 T. salt

1-1/2 C. chopped red onion

2 cups lukewarm water, 95-100°F.

2 T. rosemary

1 1/2 C. Asiago cheese, grated

Dissolve 1 tbsp. dry active yeast in 2 cups of lukewarm water. Stir. Let sit 5 - 15 minutes.

In a separate bowl mix 5 - 6 cups flour with 1 tbsp. salt, 2 T. rosemary, or other herb.

Mix flour mixture with yeast water. Knead for 5 minutes. Add 1-1/2 cups chopped red onions. Knead for 5 minutes. Cover with a towel, let rise in warm spot for 1 hour, or until double in size. Pound down.

Add grated Asiago Cheese. Knead until mixed. Cut into 2 loaves. Dough can be put into loaf pan or shaped into loaves, round or oblong. Place on parchment paper (non-waxed) on or in a pan.

Bake at 400°F. for 40 - 50 minutes.

I was just going to suggest that one too. There are several more on Google that do not have onions. I have made lots of cheese bread and simply used my regular recipe and added cheese to it. I am not sure why you could not do that with asiago cheese as it works for cheddar. You can add all kinds of things to bread dough before baking.

Hi, gang...thanks for the advice! Here I was, thinking you can't make bread from a recipe designed for a bread machine.

I've tried adding things to a French bread recipe and never have gotten the results that I've wanted, so I've been loathe to just dump things into a bread recipe that wasn't geared around added solid ingredients. I'm going to give the cheese-garlic recipe a whirl and see how I fare - thanks again!! You all are always so awesome when it comes to pulling my butt out of a jam. :)
