20 or so years ago there was a coffee specialty shop in Pasadena called La Mocha. When I went in weekly while my kids were participating in a children's choir at PCC, I always ordered a tall iced orange latte. It was comprised of a cold brew espresso mixed with milk and Wagner's orange flavoring. I sure miss that drink.

Does anyone have experience making the cold brew espresso?

Directions for a successful how-to? Thx. :)

MsMarm,

Years ago I had the coolest filter system for making cold brew espresso. I would cold filter it overnight through a "drip" system. It made the absolute BEST iced coffee. I'll see if I can find it online. I can't have ANY caffeine now but I so crave iced coffees made with the cold drip system.

Ms Mar,

Here's a link to pretty much what I did to produce the "concentrate". Only I had an actual filter made for cold brewing. I'll keep looking and hopefully find it online. I know I bought it when I worked at Surfas, but it may have been a special order.

Thanks, Marlene. Seems like the cold brew filter will make the process easy. Thanks for looking for one. I'll call local places.

We actually tried to 'cold brew' once before keeping the sludge in the refrigerator overnight, but it came out weak. Perhaps steeping it at room temperature will make a stronger brew.

Hmm. Kitchen-chemistry-wise, would it make sense to start out with hot water and let it cool and sit for 12 hours?

MsMarm,

I ran across this article on iced coffee this morning and thought of you. (Lordy, I miss my iced coffee, but I just cannot do caffeine).

It's from Ree Drummond (pioneer woman).

Have a wonderful weekened!

Great page, Marlene. I laughed out loud at her "...Come...to...MAMA!..." moment.

I've GOT to try her "recipe," and, with her ambrosia-like description of iced coffee with sweetened condensed milk (although a sweetened condensed milk v.rgin), I'm willing to give it a try.

Thanks!

And, Marlene, can you tolerate her coffee infusion using decaf coffee?

Msmarm, I found a recipe for cold brewed coffee on pinterest.com. The recipe comes from America's Test Kitchen. They have a wonderful site along with Cook's Illustrated and Cook's Country. For a nominal fee for each you can search all their recipes. Here's the url www.americastestkitchenfeed.com/doityou ... rew-coffee. I don't know how to put it on here so you can go directly to it. I'm a lame-brain when it comes to the computer. Hope this helps.

Msmarm, I just clicked on the address on my post and it does go to America's Test Kitchen. But it says it can't find the recipe, but if you scroll down it's got a picture of it. Just click on that and it goes right to it.

Pam... what a neat trick! Thanks for the link. I LOVE the part about putting a pinch of salt in the coffee. My grandmother always did that and I thought she was crazy.

MsMarm... I want to try the cold method again as I have heard that there is very little caffeine left when you don't cook it. However, that being said, I get a tremendous buzz when I chew espresso beans... ya know those chocolate coated little devils? ;-). I just don't do caffeine well and I get upset because my husband could drink a pot at night and then go to sleep... and actually sleep.
